The Story of the Invention of Ketchup Sauce

How did a simple sauce become so popular around the world? The word ketchup comes from the Chinese hockey word ke-tsiap, which is the name of a sauce made from fish yeast.
Traders are said to have imported the fish sauce from Vietnam to China. It is possible that the British became acquainted with ketchup in Southeast Asia and tried to imitate this dark sauce when they returned.
This probably happened in the late 18th and early 18th centuries, as evidence suggests that the recipe for ketchup in dough was published in 1732 by Richard Bradley. But that sauce is definitely not what we know today as ketchup. Most British recipes used ingredients such as mushrooms, walnuts, oysters, and anchovies in an attempt to achieve the salty taste they had tasted in Asia.
Mushroom ketchup is said to have been a favorite of Jane Austen (author of Pride and Prejudice). These early kinds of ketchup were often thin and dark, adding more to soups, sauces, meats, and fish. So far, one important ingredient in ketchup was scarce: tomatoes!

The first recipe with the invention of ketchup sauce

The first known tomato ketchup recipe was found in 1812, written by scientist and horticulturist James Miss, in which he called tomatoes “apples of love.” His recipe included tomato and pulp, spices, and some brandy, but it was low in vinegar and sugar.
One of the reasons ketchup was so successful was that it could be stored for up to a year. However, storing tomato ketchup became challenging. Since the growing season of tomatoes was short, ketchup growers had to find a solution to the problem of maintaining tomato pulp throughout the year. Some manufacturers acted so poorly in this area that they resulted in dishes containing contaminants such as bacteria, spores, yeast, and mold, to the point that Pierre Blatt, a French cookbook author in 1866, called commercial ketchup “dirty, rotten, and rotten.”.

By the end of the 19th century, benzoates were considered harmful to health. One of the pioneers in combating these additives was Dr. Harvey Washington Wiley, who proved that the use of these harmful additives was unnecessary if high-quality raw materials were used.
Wiley with a man named Henry Jay. Heinz partnered with Pittsburgh, Pennsylvania, which began making ketchup in 1876. Heinz also convinced American consumers that they did not want chemicals in their ketchup.
In response to the benzoate controversy, Heinz invented a recipe that used ripe red tomatoes that contained natural preservatives called pectin instead of the ingredients used by the producers and the amount of vinegar in the sauce to prevent the sauce from spoiling.
